Chocolate Fridge Cake

It's been far too long since I've baked a cake (new kitchen countdown: a tentative 6 days!) but I couldn't wait any longer, so I trawled through some recipes I have Pinned and found this fab one by My Darlings And Me, a Chocolate Fridge Cake.

I changed a few things (as usual) so it was a layer of malteasers, covered in the melted chocolate/butter/golden syrup (courtesy of the microwave plugged in to behind the sofa), then a layer of rice krispies, a row of curly wurlys, topped with broken up digestives mixed with the remaining melted chocolate/butter/syrup. Left to set in the fridge - hence the name!

A chocolate explosion!

Baileys and Chocolate Cheesecake

We've had no kitchen for the last week and a half, and have been living on barbecues and takeaways.
Not being very good at planning ahead, I agreed over a month ago to make a cake for a good friend who invited us to dinner. On realising that, oops, I don't have an oven, I had to come up with a cunning plan for a cake with no baking - ok, it wasn't that hard - a chilled cheesecake!

This is a Baileys and chocolate cheesecake, made using Jen's Place recipe for Strawberry Chocolate Cheesecake, substituting the strawberries for about 150 ml Baileys, and covered in grated flake. The butter was melted in the microwave (still have a functioning one for now), and then everything else was fridgeworthy. I have made this before using the strawberries and it was delicious, but my friend specified no fruit...!!
